Guide VERON des Champagnes 2016
(around 40 € euros per bottle)
Sober and bright presentation.
Aspect :
·
Golden,
solar.
·
Particularly
fine bubbles.
·
Refined
bead of bubbles.
Nose :
·
Radiant, it slowly reveals its
captivating and endless aromatic melody.
·
Aromas of cherry liqueur,
blackcurrant, raspberry and red currant, touching signatures of the Pinot
Meunier (50%).
·
The nose then offers us a flavoured
breath, composed of gentle hints of spices and of improbable roasted notes,
result of the ageing of the base wines from Pinot Meunier in oak barrels.
·
The Chardonnay (50%) unveils
at last its elegance with citrus fruits, acacia, apple and pear, enhanced by a
joyful maturity, result of 11 years of ageing on laths of the bottles before
disgorgement.
Palate :
·
Pure attack thanks to the rigorous selection of the
first juices (tête de cuvée) during
the pressing of the grapes, to the timely stop of the malolactic fermention of
the base wines, and to the reduced dosage, with only 3,6 g/L of sugar added at
disgorgement.
·
The mouth is then revealed, sensual, with a remarkable
depth, a characteristic sign of the 2 oldest plots of the wine estate, planted
in 1956 in Montigny-sur-Vesle and in 1982 in Baslieux-sous-Châtillon.
·
Tasty and mineral finish, barely spicy.
·
Great length on the palate.
With this cuvée
Décennie 2004, Eric Taillet, its producer, signs a rare Champagne,
unforgettable.
To taste during gourmet meals, to accompany a duckling
fillet with vegetables and roasted fruits, for example.
Wine grower in Baslieux-sous-Châtillon since
1961, the Champagne House Eric Taillet passionately cultivates its vineyard of
5.75 hectares, settled in the terroir
of Baslieux-sous-Châtillon mainly completed by Binson-et-Orquigny and
Montigny-sur-Vesle. A gentle and patient oenology, favouring traditional
methods, gives birth each year to around 35,000 bottles of highly expressive
Champagnes, variations inspired around the Pinot Meunier.
