Aspect :

Golden with green glints.

Delicate bead of bubbles.

Nose :

Radiant, it reveals immediately a vast aromatic spectrum.
·
Scents of apple and pear compote, with touches of citrus fruits, dried
apricot and raisin, almond and hazelnut, signature of the Chardonnay (65%),
selected in the Côte des Blancs.

Then gradually reveals the Pinot Noir (35%), selected in the Grand Cru
of Aÿ, with some joyful aromas of red fruits, barely spicy.

Patience is rewarded by the appearance of fragrances of gingerbread and
pastries, subtly roasted, expressions of the maturity of this Champagne, the
result of ageing on laths of the bottles for 5 years, before disgorgement.
Palate :

Ample attack, with remarkable depth, a lively
minerality, delicately iodized and mentholated, underlined by the absence of
dosage at disgorgement.

Refined woody notes, on touches of honey and soft
walnut, obtained by ageing of base wines of Pinot Noir for 6 months in oak
barrels from 5 to 20 years old.
·
The mouth then becomes powerful and warm, almost
structured.
·
Deliciously
acidulous finish.
·
Great length on the palate.
With this cuvée Brut Nature Grand Cru, Philippe Delescot, Chef de Cave of the Champagne House of Edouard Brun et Cie, was able to compose the perfect blending, with 80% of 2008 and 20% of reserve wines (including some very old ones), to offer us a superb dinner Champagne.
Perfect to accompany a
candied shoulder of lamb.
Settled in Aÿ since 1898, the Champagne House
Edouard Brun is based on its 20 hectares vineyard (including 8 hectares
belonging to the House), with some plots established in the Grand Cry of Aÿ and
the Premiers Crus of Chigny-les-Roses, Ludes and Rilly-la-Montagne, in the
Mountain of Reims, to perpetuate the local tradition producing and marketing
around 200,000 bottles of highly expressive Champagne each year.
