Nose :
·
Radiant, with heady elegance
and complexity, definitely thanks to the lengthy period between disgorgement
and expédition.

Initially dominated bu the
Chardonnay, exclusive varietal of the Cuvée, carefully selected on the Grands
Crus of Avize (51%) and of Mesnil-sur-Oger (41%) in the Côte des Blancs,
completed by the Premier Cru of Villers-Marmery, with delicate scents of citrus
fruits, white flowers, apple and pear compote, almond, hazelnut and peach.

The maturity is then
imperceptibly revealed with some sensual hints of honey and brioche, underlined by a touch softly
roasted, obtained by ageing on laths of the bottles for 5 years before
disgorgement.
Palate :

Pure attack, full of tension, enhanced by the
selection of the first juices (cuvée) during the pressing of the grapes, carried
by a remarkable minerality.

The mouth is then pulpy and enveloping, carried by the
soft effervescence and a touch of exotic fruits, perhaps the result of the
alcoholic fermentation fulfillment between 16 and 18°C, during vinification of
the base wines.

Dense and tastily acidulous finish.
·
Great length on the palate.
With this Blanc de Blancs 2008, Michel Davesne, Chef de Cave of the Champagne House Deutz, deliver us an unforgettable interpretation of the Chardonnay and of the great year 2008.
To taste
as an aperitif, or during a meal, to go with scallops « tartare »,
for example.
