Settled in Fontette, in the heart of the cote des Bar since 1973, the champagne Cristian Senez cultivates its 28 hectare vineyard in respect of the environment, to elaborate and market 500 000 bottles each of a range of 11 champagnes of character, of which 30% are sold for exportation.
Original presentation, for a vintage created in tribute to Angelique Roger, actual manager of the estate, and to his daughters Marion and Melanie. Flask with womanly and generous shapes, dressed with a metallic label.
Visual
aspect :
- Pale gold, with luminous tints of green.
- Very fine bubles.
- Delicate bead, persistent after service.
Nose :
- Elegant, it reveals slowly its aromatic universe,
refined and endless.
- Delightful aromas of apple,pear, lemon and
grapefruit, as well as nuances of white flowers, hazelnut and almond,
expressions of the chardonnay (65%).
- The nose then becomes warm with soft notes of brioche and caramel, before revealing improbable aromas of exotic fruits (lychee, mango, pineapple and apricot), surely due to the realisation of the alcoholic fermentation atlow temperature (14ºC) on the base wines, but above all, unforgettable signatures of the pinot blanc (35%).
Palate :
- Classy attack, thanks to the blockage of the
malolactic fermentation on the base wines and to the rigorous selection of
the first juices (cuvee) at the pressing of the grapes.
- The palate then develops an ample and captivating
voluptuousness, carried by a particular minerality.
- Dense and delicious finish.
- Great length in the mouth.
With this Cuvee des Filles, Frederic Roger, cellar master at Champagne Cristian Senez, gives us a seducing and original interpretation of the clayey-limestone soil of Fontette, exclusive origin of the grapes harvested in 2011.
To enjoy during the aperitif or during a meal with friends, with a filet of wild fish from Leman, for example.
