Nose :

Initially reserved, it becomes
radiant to take us into a captivating and endless waltz of harmonious
fragrances.

Generous aromas of gingerbread
and caramel, evolving towards blond tobacco and roasted coffee, expressions of
the well-defined maturity of the cuvée
obtained by a patient ageing on laths of the bottles before disgorgement (7
years), underlined by reserved woody notes.

Later, the Pinot Noir (34%) is
unveiled with scents of candied red fruits, mingled with elegant fragrances of
citrus fruits, pineapple, apricot and raisin, signatures of the Chardonnay
(66%) vinified and aged in oak barrels (1 to 6 years old) for 6 months.
Palate :

Pure attack, allowed by the rigorous selection of the
first juices (cuvée) during the pressing of the grapes, and by the timely stop
of the malolactic fermentation of the base wines of Chardonnay briefly aged in
wood.

The mouth then reveals a tasty balance, deep and
sensual.
·
Delicious finish, supported by an intense minerality.
·
Impressive length on the palate.
With this Brut Vintage 2006 Collection Privée (limited edition of 10,000 bottles), Sébastien Walasiak, Chef de Cave of the Champagne House Collet, was able to blend the best Premiers and Grands Crus of Champagne, selected with tasting before blending, to enhance the year 2006 and to offer us an unforgettable moment of pleasure.
