Guide VERON des Champagnes 2016
(around 54 euros per bottle)
Luxurious and festive presentation.
Aspect :
·
Salmon coloured, bright.
·
Fine bubbles.
·
Elegant bead of bubbles.
Nose :
·
Radiant and sensual, it
immediately takes us into its endless aromatic universe.
·
The candied red fruits
(blackberry, cherry, raspberry and red currant) and the delicate spices,
touching signatures of the Pinot Noir (85%), are conbined with heady notes of
fully ripe apple and pear, exotic fruits and mint, characteristic signs of the
Chardonnay (11%) and the Pinot Blanc (4%).
·
Later, some fragrances of brioche
and caramel are unveiled, enhanced by shy hints of roasted coffee, expressions
of the emerging maturity of the Champagne obtained by 4 years of ageing on
laths of the bottles, before disgorgement.
Palate :
·
Pure attack, allowed by the selection of the first
juices (cuvée) during the pressing of the grapes and by the timely stop of the
malolactic fermentation of a part of the base wines (30%).
·
The mouth then reveals a rare density, warm, perhaps
thanks to the rigorous selection of old plots in the Vallée d’Arce, harvested by
hand with a perfect maturity in 2009.
·
Tasty and mineral
finish.
·
Great length on the palate.
With this cuvée Confidences Rosé Brut, Brice Bécard, Chef de Cave of the Champagne House Chassenay d’Arce, was able to blend the white base wines (83%) with the red wines (12%) and the wine of bleeding (5%) to create an exceptional cuvée.
To taste now and in the coming years, during your gourmet
meals, to accompany a salmon marinated with « Scandinavian method »,
for example.
Settled
in Ville-sur-Arce since 1956, the Champagne House Chassenay d’Arce gathers 130
united and passionate wine growers. A vineyard of 325 hectares mainly planted
with Pinot Noir (90%), completed by 9% of Chardonnay and 1% of Pinot Blanc, and
a controlled oenology guve birth to a range of highly expressive Champagnes,
variations inspired around terroirs
of the Côte des Bar.
