Guide VERON des Champagnes 2016
(around 81 euros per bottle)
Champagne mythique
Luxurious and elaborate presentation, emblematic of the brand.
Aspect :
·
Intense gold, brilliant.
·
Fine bubbles.
·
Refined bead of bubbles.
Nose :
·
Captivating, it slowly reveals
its whole complexity, touching variations around sensuality.
·
The Pinot Noir (65%) first
establishes itself, with some radiant scents of red and black fruits compote,
coupled with spices.
·
The generous maturity of the
Champagne, result of 12 years of ageing on laths of the bottles before
disgorgement, takes us into a warm whirlwind of fragrances with some notes of
gingerbread and honey, evolving towards dark chocolate and roasted coffee.
·
Finally, first shy and then
more daring, the aromas of apple, pear, citrus fruits and white flowers are
unveiled, elegant signatures of the Chardonnay (35%).
Palate :
·
Classy attack, thanks to the rigorous selection of the
first juices (cuvée), purer, during
the pressing the ripe grapes, harvested by hand.
·
The mouth then becomes deep and caressing, underlined
by the silky effervescence, supported by delicate woody notes obtained by the
vinification in oak barrels of 10% of the base wines.
·
Tasty finish.
·
Exceptional length on the palate.
