Founded in 1920, the champagne Bauchet, settled in Bisseuil since 1960, cultivates with care its 35 hectare vineyard (10 hectares in the Marne region and 25 hectares in the Aube region), using a strict approach to the reduction of the environmental footprint. The assured traceability from the vine to the flask guarantees the perfect quality of the 250 000 bottles of champagne elaborated and marketed each year.

gold, with discreet tints of green.

Nose
:
- Of an
exquisite elegance.
- Aromas
of citrus fruits (lemon and grapefruit), apple and pear compotes, almond,
hazelnut and white flowers, ever so slightly iodized and mentholated,
signatures of the chardonnay (80%) selected on the premiers crus soils
of Grauves and Bisseuil.
- Later.
The nose reveals all of the cuvee's maturity obtained by 4 years of ageing
on laths before disgorgement, with sensual nuances of butter, caramel and
honey.
- The pinot noir (20% from Bisseuil) finally comes through, with delightful scents of crystallised red fruits (blackcurrant, cherry and raspberry) and delicate spices (white pepper and cinnamon), joined by a touch of exotic fruits.
Palate
:
- The
palate expresses straight away a touching balance between the soft
minerality of the premiers crus soils, the purity achieved by the rigorous
selection of the first juices (cuvee) during the slow pressing of the
grapes, and the ample and tender voluptuousness, strengthened by the
realisation of the malolactic fermentation on the base wines.
- Full-flavoured
finish, carried by an intense heat and by the fine effervescence.
- Great length in the mouth.
With this cuvee Memoire 2008, Bruno Charlemagne, cellar master at Maison Bauchet, gives us a remarkable interpretation of the great year 2008.
To enjoy during the aperitif or during a meal, to accompany a roasted dory in a pressure cooker, for example.
