Nose :

Generous
and elegant.

Joyful fragrances of citrus
fruits, apple and pear compote, apricot and raisin, supported by a life-giving
breath, iodized and mentholated, touching signatures of Chardonnay, exclusive
varietal, harvested in 2008.

Well defined maturity, with
its radiant fragrances of fresh butter, honey and pastries, result of 5 years
of ageing on laths of the bottles before disgorgement.
Palate :
·
Classy opening, allowed by the selection of the first
juices (cuvée), during the pressing
of the grapes, and by the adjusted dosage with only 5 g/L of sugar added at
disgorgement.

The minerality, deep and heady, expression of the old
plots of origin of the grapes (more than 50 years old) then takes us into a creamy
finish, thanks to the judicious fulfillment of the malolactic fermentation of
the base wines.

Great length on the palate.
With this cuvée
Millésimé 2008 – Empreinte - Grand Cru Blanc de Blancs, François Larmandier and
Jean-Philippe Waris its producers, sign a remarkable interpretation of the
Grands Crus of the Côte des Blancs (Avize, supplemented with Chouilly).
To taste from
aperitif to meal, to accompany scallops with white butter, for example.
Settled in Avize
since 1989, the Champagne House Waris-Larmandier is directed by Marie-Hélène
Waris since 2000, joined by her children, Jean-Philippe, Pierre-Louis and Inès.
A vineyard of 7 hectares, mainly spread over the great terroirs of Champagne,
cultivated according to the principles of biodynamic since 2010 at the
instigation of Jean-Philippe, allow the production and the marketing of a range
of attractive Champagnes.
