Aspect
:
·
Golden, decorated
with emerald glints.
·
Fine bubbles.
·
Delicate and persistent bead.
Nose :
·
Elegant
and captivating, it slowly unveils its endless complexity.
·
Radiant aromas of citrus
fruits, apple and pear compote, apricot and raisin, almond, hazelnut and white
flowers, supported by a breath of iodized and mentholated freshness, signatures
of the Chardonnay harvested by hand, at perfect ripeness determined with
tasting of the grapes.
·
The maturity is then revealed,
captivating aromatic caress, with its generous scents of honey, caramel,
pastries, moving towards the roasted coffee, result of 8 years of ageing on
laths of the bottles before disgorgement.
Palate :
·
Pure attack allowed by the selection of the first
juices (cuvée), during the soft
pressing of the grapes.
·
The mouth then becomes dense and tasty, expression of
the oldest plots of the wine estate (more than 35 years old) rigorously
selected and followed, underlined by the silky effervescence and carried by the
striking minerality.
·
Warm finish thanks to the judicious fulfillment of the
malolactic fermentation of the base wines, with a rare intensity.
·
Great length on the palate.

To taste
from aperitif to meal, to accompany a crayfish tails gratin, for example.
Located
in Vertus in the heart of the Côte des Blancs, the Champagne House Paul Goerg
cultivates with care its vineyard of 120 hectares, planted with 87% of
Chardonnay and 13% of Pinot Noir, of which 80% are located in Vertus. An
