Aspect :

Nose :

Voluptuous
and complex.

Sensual blending between
delicate woody notes with subtle aromas of soft spices, barely toasted, result
of the vinification and the ageing in oak barrels (1 to 10 years old), and the
elegance of the Chardonnay, harvested ripe in old plots (45 years old on
average), with some scents of citrus fruits, apple, pear, apricot and raisin.

Later, the maturity of the
Champagne obtained by 5 years of ageing on laths of the bottles before
disgorgement, is revealed with its aromas of honey and pastries, punctuated by
iodized and mentholated breaths.
Palate :

Pure attack, allowed by the selection of the first
juices (cuvée) during the pressing of
the grapes, reinforced by the timely stop of the malolactic fermentation of the
base wines.

The mouth then becomes deep, balanced, almost
structured, enhanced by a vibrant minerality.
·
Silky finish, definitely thanks to the regular bâtonnage of the base wines during the
ageing in barrels.
·
Great length on the palate.
With this Blanc Absolu, Frédéric and Rodolphe Minière, its producers, were able to compose the ideal blending, with 85% from 2009 and 15% from 2008, to offer us a remarkable interpretation of the Hermonville terroir, exclusive origin of the grapes.
To taste
during meal, with a grilled poached pigeon and its ponzu juice, for example.
Wine grower in Hermonville in Massif de
Saint-Thierry, north of Reims, the Champagne House Minière F&R cultivates
its vineyard of 8 hectares of old vines, planted with the 3 champenois varietals, in the greatest
respect of the environment. A loamy-clayey-sandy soil, a south-southeast orientation
and a creative oenology, with passage in oak barrels, without malolactic
fermentation or cooling, allow the production and the marketing of 15,000
bottles of highly expressive Champagnes per year, since 2007.
