Guide VERON des Champagnes 2017
(around
350 euros per bottle)
Mythical Champagne
Impenetrable and emblematic presentation.
Aspect:
Golden,
bright.
Very
fine bubbles.
Refined
tears.
Nose:
Fabulous
and heady.
Initially
marked by a well defined maturity, the one of the Plénitude P2, result of 16
years of ageing of the wine in which the Champagnes feeds on the prise de mousse yeasts, with touching
toasted hints and brioche aromas, barely roasted.
The
nose then lights up, in an incredible aromatic symphony, between aromas of
apricot and raisin, almond, hazelnut, apple and pear compote, supported by an
iodized and mentholated breath, coupled with scents of red fruits and kirsch,
magnificent signatures of the Chardonnay softly mingled with the Pinot Noir.
Palate:
Dense
en lively opening, the Champagne House initially reveals a vital force and a
rare tension, enhanced by the mind-blowing minerality.
The
mouth becomes sensual, ample and generous, supported by the creamy and melting
effervescence.
Tasty
finish, deliciously bitter, punctuated by spices and smoked notes.
Exceptional
length on the palate.
Richard
Geoffroy, cellar master of the Champagne House Dom Pérignon since 1996, was
able to orchestrate with talent the symbiosis of the best terroirs of Champagne (among 16 of the 17 Grands Crus and 4 of the
42 Premiers Crus, including Hautvillers), and to wait patiently its second
Plénitude to place this Dom Pérignon P2 1998 in the Champagne region heritage.
Even if it is self-sufficient, it will delight your gourmet meals, with
hot shellfish and parsnip velvet, for example.
Born
in 1668, the Champagne House Dom Pérignon, faithful to the ambition of Dom
Pierre Dom Pérignon to create the best wine in the world, rigorously selects
the best grapes to compose exceptional Champagnes. Always vintage, the Dom
Pérignon Champagnes are declined in three collections Plénitudes (P1, P2 and
P3), disgorged at the best possible moment according to their degree of
maturation and harmony.
