Nose :

Radiant, it immediately takes
us into a heady aromatic breath, thanks to the very low sulphitage.

The aromas of citrus fruits,
apple and pear, coupled with notes of exotic fruits, embrace the hints of red
fruits and subtle spices, signatures of the Pinot Meunier, exclusive varietal
of the cuvée.

The maturity of the Champagne
is then unveiled, result of 5 years of ageing on laths of the bottles before
disgorgement, with patient autolysis of the prise
de mousse biological yeasts Quartz, supported by generous fragrances of
honey, evolving towards roasted coffee.
Palate :

Pure attack, reinforced by the absence of dosage (no
sugar added at disgorgement), translation of the positive energy of the soils
of the plots (36 years old on average), south-southwest facing, on which the
grapes have been carefully harvested, at perfect ripeness.

The mouth then becomes caressing, carried by an
enveloping warmth.

Deep finish.
·
Great length on the palate.
Christophe Mignon has been able to put his talent of wine grower in the service of the natural elements, taking into account the lunar calendar, to preserve all the vital force of his Cuvée Millésimée 2008 Brut Nature.

Fifth generation of wine growers,
Laurence and Christophe Mignon take to heart to perpetuate the champenois tradition. A deep respect for
nature, an attentive and patient growing of a wine estate of 6.5 hectares
settled in the Marne Valley, between Le Breuil and Festigny, according to the
principles of biodynamic, with ploughing and cover planting of the soils, and a
gentle oenology, give birth to around 45,000 bottles of authentic Champagnes
each year.
