Nose :

remarkable complexity.

Joyful aromas of red and black
fruits, supported by a touch of spices, heady signatures of the Pinot Noir,
exclusive varietal of this Champagne, carefully harvested by hand in 2011, in
the south-facing plot of ancient low yield vines of Bouzy, Les Loges (40
years).

The maturity of the cuvée is then unveiled, with some gentle
notes of grilled almond and hazelnut, enhanced by the reserved and harmonious
woody touch, the result of vinification of the base wines in 228L oak barrels
(2 to 10 years), purchased new in the cooperage Seguin Moreau.
Palate :

Pure attack, carried by a vibrant minerality, allowed
by the timely stop of the malolactic fermentation of the base wines, reinforced
by the adjusted dosage, with only 4 g/L of sugar added at disgorgement (extra
brut).

The mouth, reserved, becomes ample and deep,
underlined by the silky effervescence.

Dense finish,
barely spicy.
·
Very great length on the palate.
With this Cuvée Blanc de Noirs – Les Loges (4,259 bottles), Hervé Savès, wine grower, delivers us a high-level Champagne, inspired interpretation of the terroir of Bouzy.
To taste
during meals among friends, to accompany a young wild boar stew with its fresh
tagliatelles, for example.
Settled
in Bouzy, the Champagne House Camille Savès cultivates with love its vineyard
of 10 hectares of old vines, composed of 80% of Pinot Noir and 20% of
Chardonnay, divided over the Grands Crus of Bouzy, Ambonnay and
Tours-sur-Marne, completed by the Premier Cru of Tauxières. A rigorous
oenology, firmly focused on the parcelled vinification in wood, gives birth
each year to 85,000 bottles of highly expressive Champagnes, of which 80% are
exported (USA).
