Champagne Bonnet-Ponson – Jules Bonnet 2008

Luxurious presentation, in a bottle engraved with the initials of Jules Bonnet.

Aspect :

·        Golden.
·        Fine Bubbles.
·        Reserved bead of bubbles.

Nose :

·        Radiant and generous.
·        Joyful scents of honey, caramel, evolving towards white chocolate, barely roasted, expressions of the great maturity of the cuvée obtained by the ageing on laths of the bottles for 5 years before disgorgement, underlined by subtle woody notes due to the vinification and the ageing for 8 months in oak barrels (5 to 6 years old).
·        The Pinot Noir, carefully selected in the old vines of 50 years in the Grand Cru of Verzenay (50%) and of 30 years in the Premier Cru of Chamery (50%), is then unveiled with fragrances of red fruits and delicate spices.

Palate :

·        Pure attack allowed by the rigorous selection of the first juices during the pressing of the grapes (cuvée) and by the stop of the malolactic fermentation of the base wines.
·        The mouth then becomes deep.
·        Deliciously mineral finish, coupled with a touch of spices.
·        Remarkable length on the palate.

Thierry Bonnet and his son Cyril, its producers, were able to implement a gentle oenology, without chaptalization, fining, filtration and with fulfillment of the alcoholic fermentation by natural yeasts from the terroirs, to compose a cuvée Jules Bonnet 2008 with a touching personality, vibrant homage to the great-grandfather of Thierry.

To taste during meals among friends with a braised sweetbread with gingerbread, for example.

Wine grower in Chamery since 1862, the Champagne House Bonnet-Ponson passionately cultivates its vineyard of 10.5 hectares, composed of 60 plots of old vines divided over the Grands Crus (Verzenay and Verzy) and the Premiers Crus (Chamery, Vrigny and Coulommes-la-Montagne) of the Mountain of Reims. Six generations of family tradition, a commitment to organic viticulture and a controlled oenology give birth to around 90,000 bottles of Champagnes revealing terroirs each year.
