Nose :

Radiant thanks to
the long period between the disgorgement and the marketing (3 months)

Touching hints of
citrus fruits, Mirabelle plum, apricot and white flowers, coupled with a touch
of exotic fruits, signatures of the Chardonnay carefully selected by hand in
2011 in the old plot of Damery (50 years old) “Les Pierre Martin”, with an
optimal maturity (no chaptalization), heightened by the intervention of the terroir natural yeasts for the alcoholic
fermentation of the base wines.

Later, the
maturity of the Champagne is revealed, warm, result of 3 years of ageing on
laths of the bottles before disgorgement, underlined by subtle woody notes
obtained by the vinification and the ageing in 5 years old oak barrels from
Burgundy.
Palate :

Pure attack thanks to the selection of the first
juices (cuvée) during the pressing of
the grapes and to the adjusted dosage with only 3 g/L of sugar added at
disgorgement.

The mouth then appears to be balanced, caressing and
sensual, enhanced by the delicate minerality of the chalky soils and the silky
effervescence.
·
Tasty finish, punctuated by a touch of spices.
·
Great length on the palate.
With this
restricted and numbered Cuvée 381 Extra Brut (900 bottles per year), Alain
Suisse was able to compose a highly expressive Champagne, result of an inspired
vinification.
To taste during the meal, with a roasted veal, for example.
Settled
in Cumières, in the great Marne Valley, the Champagne House Alain Suisse
passionately cultivates its vineyard of 3 hectares, planted with the 3 champenois varietals, spread over
Damery, Cumières, Hautvillers and Vitry-le-François. A real desire to respect
the soils and to reduce the environmental footprint, and a gentle oenology,
without filtration or cooling, give birth to 22,000 bottles of authentic
Champagnes each year, expressions of their terroir.
