Sober and elegant presentation.
Aspect:
Golden
and brilliant.
Refined
bubbles.
Bead
of scattered bubbles, persistent on the periphery of the flute.
Nose:
Radiant,
it takes us into a pleasure whirl.
Generous
and endless farandole of scents of candied red and black fruits (strawberry,
raspberry, red currant, blackcurrant, kirsch and blackberry), punctuated by
delicious spices (pepper and vanilla), signature of the Meunier, exclusive
varietal of the cuvée, harvested by
hand in 2012.
The
nose becomes sensual, with aromas of honey and pastries, thanks to three years
of ageing on laths of the bottles before disgorgement, and patient autolysis of
the prise de mousse yeasts.
Palate:
Tonic
and dense attack, definitely thanks to the rigorous selection of the oldest
plots of the wine estate (over 35 years old), planted between 1954 and 1978, in
the Premier Cru of Vrigny.
The
mouth then run through an intense and comforting warmth, thanks to the
judicious fulfillment of the malolactic fermentation of the base wines and to 7
g/L of sugar added at dosage.
Deliciously
acidulous finish, highlighted by the heady minerality.
Remarkable
length on the palate.
With this Cuvée Vieilles Vignes, Olivier Suply, passionate wine grower,
offers us a joyful Champagne, good value for money, inspired interpretation of
the Meunier in one of its best terroirs.
To taste from aperitif to meal, with a young Challans guinea fowl
supreme and girolle mushroom cream, for example.
Settled
in Vrigny, in the Mountain of Reims, the Champagne House Suply, with its
guestrooms, has been perpetuating the traditions of welcome and champenois friendliness for 6
generations. Driven by a real desire to reduce the environmental footprint
(environmental certification in 2010 and being certified Haute Valeur
Environnementale), it cultivates with care its vineyard of 5 hectares, without
herbicide and with work with horse, to produce around 22,000 bottles of quality
Champagnes per year.
