Original, uncluttered and bright bottle.
Aspect:
Golden,
brightened up with subtle emerald glints.
Fine
bubbles.
Eminent
corolla of bubbles.
Nose:
Gourmet
and radiant, it takes us into a sensual and endless aromatic breath, obtained
by the perfectly controlled ageing of the base wines in oak barrels from
Burgundy.
Joyful
maturity obtained by six years of ageing on laths of the bottles before
disgorgement, with its aromas of honey, caramel and roasted coffee, punctuated
by delicate spices.
Finally,
the Chardonnay unveils all its elegance, with its scents of citrus fruits,
apple, pear, white flowers, and exotic fruits.
Palate:
Pure
opening, thanks to the rigorous selection of the first juices (cuvée) during the pressing of the
grapes, supported by the timely stop of the malolactic fermentation of the base
wines and by the adjusted dosage, with only 6 g/L of sugar added at disgorgement.
The
mouth becomes caressing, deep and balanced, highlighted by the creamy
effervescence.
Warm
finish, enhanced by a vibrant minerality, signature of the Grands Crus terroirs of the Côte des Blancs (Avize
and Oger).
Remarkable
length on the palate.
Sébastien Pascal, producer, put his oenological talent in the service
of this restricted cuvée Extra Brut
Blanc de Blancs Part des Anges 2008, to offer us a moment of rare emotions.
Ideal
from aperitif to meal, with verrines of scallops and lobster cream sauce, for
example.
Installé
au château de Cuisles depuis 2000, le champagne Sébastien Pascal, cinquième
génération de vignerons, perpétue les traditions familiales transmises de père
en fils depuis 1870. Une sélection rigoureuse des meilleurs raisins sur les
parcelles du domaine implantées sur les grands crus de la côte des blancs et de
la montagne de Reims, et une vinification douce et inspirée, au château,
donnent naissance à une gamme de champagnes de haute tenue.
