box, and decorated with a superb handmade pure carbon cap.
Aspect:
Golden
and sparkling.
Fine
bubbles.
Elegant
bead of bubbles.
Nose:
Endless
aromatic curls, unforgettable.
Aromas
of red and black fruits, radiant, signatures of the Pinot Noir (50%).
The
nose becomes soft, with heady scents of honey, cocoa, roated coffee and light
tobacco, punctuated by spices, translations of the well defined maturity
obtained by 9 years of ageing on laths under cork, before disgorgement on the
spot (manual without ice).
Later,
the Chardonnay (50%) is revealed, first timidly, and then more clearly, iodized
and mentholated breath of freshness coupled with hints of citrus fruits, apple
and pear.
Palate:
Deep
and pure attack at once, result of the rigorous selection of the finest juices
during the soft pressing of the grapes in a mobile Coquard press (unique in
Champagne) with sloping plates.
The
mouth is then revealed warm and melting, supported by the vibrant minerality
and reinforced by the ageing of the base wines for 8 weeks, in 300 liters
barrels specially made with the fine grain oaks from the Valley of the Ource.
Delicious
finish, barely spicy.
Remarkable
length on the palate.
With
this cuvée Editio, imagined in 1999,
produced for the first time with the 2005 crop and marketed since 2011, of
which 80% are sent to Japan, Pierre-Eric Jolly, wine grower, offers us a
gastronomic Champagne, masterful interpretation of the terroir of Landreville in the Côte des Bar.
To
taste during meals among friends, with a suckling veal chop, for example.
Settled in Landreville in the Cîte des
Bar since 1737, the Champagne House René Jolly, currently directed by
Pierre-Eric Jolly continues its pursuit of oenological perfection, between
champagnization and vinification on skins (to produce a Champagnes rosé), in the respect of the champenois
traditions. A vineyard of 13.55 hectares, composed of 75% of Pinot Noir and 25%
of Chardonnay, cultivated with care, gives birth to around 40,000 bottles of
high level Champagnes each year.
