Original and sober presentation.
Aspect:
Golden
and bright.
Refined
bubbles.
Scattered
bead of bubbles, persistent after service of the Champagne.
Nose:
Gourmet
and endless.
Initially
marked by the candied red and black fruits (cherry, blackcurrant, blackberry,
raspberry and strawberry) punctuated by delicate spices (liquorice and
vanilla), signatures of the Pinot Noir (33%) and the Meunier (33%).
The
nose is slowly revealed with the elegance of the Chardonnay (33%), with some
scents of white fruits (apple, pear and peach) and white flowers, coupled with
attractive hints of exotic fruits perhaps the result of the alcoholic
fermentation of the base wines at low temperature, in small volumes.
Palate:
Marked
and dense attack, expression of the selection of old vines (30 years old on
average), supported by the minerality and the lively effervescence.
The
mouth is then revealed, deep and radiant, definitely thanks to the ageing on
laths of the bottles for 4 years before disgorgement.
Tasty
and pure finish, obtained by a long decantation (natural settling) of the grape
juices after pressing.
Great
length on the palate.
With
this cuvée Grande Réserve, Lucile
Goulard, its producer, was able to compose the right blending of varietals,
vintages (70% from 2010 and 30% of reserve wines) and terroirs (Trigny, Janvry and Avize) to offer us a traditional
Champagne.
To
taste from aperitif to meal, to accompany a lobster soufflé with Comté cheese, for example.
Born out in 2007
from the meeting of Lucile, wine grower, and Alexandre, the Champagne House
Proy-Goulard put its dynamism in the service of the three champenois varietals. A vineyard of 4.5 hectares, spread over the terroirs of Trigny, Janvry, Rosnay,
Epernay, Mardeuil, Dizy, Vertus and Avize, carefully cultivated, with the real
desire to reduce the environmental footprint, and a patient oenology, with
parcelled vinification, give birth to a range of balanced Champagne since 2008,
marketed since 2014.
