Aspect:
Golden
and bright.
Fine
and festive bubbles.
Delicate
bead of foam, persistent.
Nose:
Sensual
and generous, it takes us into a joyful perfumed waltz.
Aromas
of nice ripe red and black fruits (raspberry, blueberry, blackcurrant and
blackberry), barely spicy, signatures of the Pinot Noir (50%) carefully
harvested by hand in the locality “Chauffour” (Aÿ), which mingles with the
elegance of the Chardonnay (50%) from the locality “La Croix” (Aÿ), with its
joyful scents of apple, pear, citrus fruits and white flowers.
Later,
the Champagne reveals its emerging maturity, with some gentle hints of honey
and caramel, obtained by two years of ageing on laths of the bottles, with slow
autolysis of the prise de mousse
yeasts before disgorgement.
Palate:
Pure
attack, thanks to the rigorous selection of the first juices (cuvée) during the soft pressing of the
grapes, supported by a heady minerality which accompanies us throughout the
tasting.
The
mouth becomes caress, ample and warm, coupled with a creamy effervescence,
reinforced by the fulfillment of the malolactic fermentation of the base wines.
Deep
and delicious finish, punctuated by spices (pepper and liquorice).
Great
length on the palate.
With this Brut Grand Cru, Vincent Leboeuf, its producer, put his talent
of wine grower in the service of the year 2013 to offer us a touching
interpretation of the Grand Cru of Aÿ.
To
taste from aperitif to meal, with a prime cut of beef smoked with juniper wood,
for example.
With
the arrival of Hélène Leboeuf alongside her father Vincent, The Champagne House
Pierre Leboeuf perpetuates the family tradition started five generations
earlier. A real desire to reduce the environmental footprint of the vineyard of
4.70 hectares established on the Grands Crus of Aÿ, Mutigny and
Avenay-Val-d’Or, and a controlled oenology allowing the production and the
marketing of around 25,000 bottles of Champagnes with personality per year.
