Traditional and luxurious presentation.
Aspect:
Pale
and bright yellow.
Extremely
fine bubbles.
Delicate
bead of foam, persistent after service of the flute.
Nose:
Initially
radiant, it takes us into a sensual aromatic waltz, between generosity and elegance.
The
Chardonnay, exclusive varietal of the cuvée,
harvested by hand in 2011, is first revealed with its subtle fragrances of
citrus fruits, nice ripe apple and pear, white flowers, apricot and peach,
coupled with hints of mint.
Later,
the emerging maturity of the Champagne is revealed with warm scents of honey,
beeswax and pastries, result of 3 years of ageing on laths of the bottles,
before disgorgement.
Palate:
Pure
attack, due to the rigorous selection of the first juices (cuvée), during the soft pressing of the grapes, reinforced by the
adjusted dosage, with only 5 g/L of sugar added at disgorgement.
The
mouth then becomes creamy and caressing, perhaps thanks to the judicious
fulfillment of the malolactic fermentation of the base wines.
Dense
and deliciously mineral finish.
Great
length on the palate.
With
this Cuvée Blanc de Blancs, Xavier Petit, led by Pascal Maumy, was able to
combine the Chardonnay from two great terroirs:
50% of old plots (more than 35 years old) in Avize, Grand Cru of the Côte des
Blancs, and 50% from Monthelon.
To taste as an
aperitif or during a meal, to accompany a fillet of sea bass with rosemary and
lemon sauce, for example.
Settled in Fleury-la-Rivière, the
Champagne House Maumy-Chapier perpetuates champenois
traditions since 1971. A vineyard of 6.5 hectares, spread over 10 Crus between
Côte des Blancs and Marne Valley, cultivated in the respect of the environment,
and a gentle and inspired oenology enable Vanessa Maumy and Xavier Petit who
preside the House since 2013, to produce and market around 34,000 bottles of a
range of quality Champagnes.
