Traditional and neat presentation. Original caps,
humorous variations around theme of the winemaker cat.
Aspect:
Golden
and crystal clear.
Particularly
fine bubbles.
Elegant
bead of bubbles, persistent.
Nose:
Radiant
and harmonious, definitely obtained by the respect of a long period between
disgorgement and marketing (6 months).
Aromas
of apple and pear compote, candied citrus fruits, apricot and raisin,
signatures of the Chardonnay (40%).
Later,
the Pinot Noir (30%) and the Meunier (30%) are revealed with joyful scents of
red and black fruits, punctuated by delicate spices, supported by the maturity
with its gourmet perfumes of honey, caramel and pastries, obtained by 3 years
of ageing on laths of the bottles in the deep cellar of the House, at 12 °C.
Palate:
Lively
attack, result of the control of the partial malolactic fermentation, stopped
on 70% of the base wines, enhanced by the vibrant minerality.
The
mouth then runs through a generous roundness, supported by a silky effervescence.
Tasty
finish, deliciously acidulous, barely spicy (liquorice and cinnamon).
Great
length on the palate.
With
this Brut Premier Cru, Florent Laval, wine grower, was able to blend with
talent the years (70% from 2012 and 30% from 2011) to offer us a traditional
Champagne with a good value for money, balanced, inspired interpretation of the
Premier Cru terroir of Cumières.
Ideal
from aperitif to meal, with a vol-au-vent of sweetbread with morels, for
example.
Wine grower in
Cumières, in the heart of the Marne Valley, the Champagne House Laval-Louïs has
been perpetuating the champenois
traditions for several centuries, between friendly welcome in its three guest
rooms and revelation of terroirs. A vineyard of 4.4 hectares south facing in
the Crus of Cumières, Damery and Hautvillers, and a gentle and accurate
oenology, without filtration nor clarification, give birth to around 20,000
bottles of Champagnes with personality each year.
