Aspect:
Golden,
decorated with emerald glints.
Very
fine bubbles.
Fine
bead of foam.
Nose:
Radiant,
it takes us into an endless perfumed breath, definitely obtained by the long
period between disgorgement and marketing (over one year) and by the non-use of
sulphur during the production.
Joyful
aromas of apple and pear compote, quince, mirabelle plum, fig and citrus
fruits, signatures of the Chardonnay, selected in 2010 in the plots of the
House cultivated according to the organic viticulture principles.
Later,
the maturity is revealed, result of 3 years of ageing on laths of the bottles
before disgorgement, with its scents of pastries slowly evolving towards dark
chocolate and roasted coffee.
Palate:
Pure
and dense attack thanks to the rigorous selection of the first juices (cuvée) during the pressing of the
grapes, highlighted by the magnificent minerality of the terroir of Damery.
Touching
balance driven by the adjusted effervescence.
The
finish becomes a sensual caress, punctuated by subtle spices.
Remarkable
length on the palate.
With
this Cuvée Sans Sulphur, Bertrand Lhopital, executive director of the Champagne
House J. De Telmont and Sylvie Collas, cellar master, were able to guide grapes
and wines with gentleness and accuracy (natural vinification in oeno biodynamy)
to reveal their vital force obtained from the geobiological balance.
To taste from
aperitif to meal, with a seafood platter, for example.
Established in
Damery, in the Marne Valley, the Champagne House J. De Telmont continues its
development under the leadership of Bertrand Lhopital, the current director,
and of his sister Pascale, fourth generation of passionate wine growers. The 8 crus of the 30 hectares vineyard of the
House, part of which is cultivated according to the organic viticulture
principles, are a part of the total supply of 107 hectares spread over 40 crus, for the creation of a range
inspired by 8 cuvées, between
tradition and modernity.
