Aspect:
Pale yellow.
Bubbles with great finesse.
Reserved bead of bubbles.
Nose:
Initially subtle, it slowly reveals its melodious and endless sensuality.
Aromas of green apple, pear, citrus fruits, peach and apricot, carried by a life-giving breath, iodized and mentholated, signatures of the Chardonnay, exclusive varietal of the cuvée carefully harvested by hand in 2011 (60%), 2010 et 2009.
Later, the joyful maturity is unveiled with its warm scents of honey and beeswax, thanks to the patient ageing on laths of the bottles (3 years), before disgorgement.
Palate:
Lively and dense attack, result of the rigorous selection of the first juices (cuvée), purer, during the soft pressing of the grapes, but also particularly of the timely stop of the malolactic fermentation of the base wines.
The mouth then becomes sensual and balanced, expression of the old vines (40 years old on average).
Radiant and impressive finish.
Impressive length on the palate.
With this Cuvée Du Mélomane – Brut Grand Cru Blanc de Blancs, Henry Beaufort signs a vibrant homage to his father Herbert, experienced saxophone player and passionate about music, inspired interpretation of the Grand Cru terroir of Bouzy.
To taste from aperitif to meal, with a marinated salmon filet, for example.
Established in Champagne since the fifteenth century, the Champagne House Herbert Beaufort produces still wines from Bouzy since 1900, and Champagnes since 1929. Henry Beaufort and his grandsons, Hughes and Ludovic, vinify with care the grapes from their vineyard of 13 hectares (10 hectares of Pinot Noir and 3 hectares of Chardonnay), spread over the best Crus (Bouzy, Ambonnay, Tours-sur-Marne, Mareuil-sur-Aÿ, Trépail, Verzenay and Serzy-et-Prin), cultivated in the respect of the environment to produce around 130,000 bottles of Champagnes and red Bouzy per year.
