Sober and elegant presentation.
Aspect:
Golden
and bright.
Fine
and festive bubbles.
Corolla
of bubbles, effervescence pearls persistent on the periphery of the flute.
Nose:
Intense
and sensual harmony.
Perfumes
of red and black fruits (blackcurrant, strawberry, raspberry, blackberry and
blueberry) underlined by delicate spices, signatures of the majority of Pinot
Noir (60%), gently mingle with elegant hints of apple, pear, citrus fruits and
fresh mint, expressions of the Chardonnay (40%).
Later,
the Champagne reveals its generous maturity, with aromas of honey, beeswax,
barely roasted, result of 4 years of ageing on laths of the bottles with
autolysis of the prise de mousse
yeasts.
Palate:
Pure
and dense opening, reinforced by the timely stop of the malolactic fermentation
of the base wines.
The
chalky minerality of the Grands Crus of the Mountain of Reims (Louvois and
Bouzy), leads us to a sensual roundness, underlined by a silky effervescence,
obtained by the adjusted dosage with 8.5 g/L of sugar added at disgorgement,
after manual riddling on wood panels.
Tasty
finish, punctuated by spices (pepper and cinnamon).
Great
length on the palate.
With this Brut
Cuvée Réservée Nicolas d’Olivet 2011, Ingrid Oudart, its producer, delivers us
a touching Champagne, remarkable interpretation of a challenging vintage.
To
taste from aperitif to meal, with a veal filet mignon and morels, for example.
Settled in
Louvois, the Champagne House Guy de Chassey has been perpetuating the family
traditions for several generations cultivating its vineyard of 9.5 hectares
planted with 75% of Pinot Noir and 25% of Chardonnay spread over the Grands
Crus of Louvois and Bouzy and the Premier Cru of Tauxières-Mutry. A real desire
to reduce the environmental footprint and a gentle and soft oenology allow to
produce and market around 60,000 bottles of highly expressive Champagnes each
year.
