Nose:
Sensual
and generous, source of rare emotions.
Initially
warm, with its heady aromas of honey and pastries, expressions of the fullness
of the cuvée obtained by 5 years of
ageing on laths of the bottles, with slow autolysis of the prise de mousse yeasts.
The
nose is revealed with an iodized and mentholated breath, puntuated by
improbables hints of spices.
The
Chardonnay, exclusive varietal of the Champagne, harvested by hand when it
reaches optimum maturity, mainly in 2009, is unveiled at last with seductive
scents of citrus fruits, white fruits, kiwi, flowers, almond, hazelnut, apricot
and raisin.
Palate:
Lively
and dense opening thanks to the absence of dosage (no sugar added at
disgorgement), supported by a rare minerality.
The
tension, real vital force, takes us into a sensual and deep softness, obtained
by the vinification and the controlled ageing of the base wines on lees, during
12 months, in oak barrels.
Fresh
finish, underlined by the creamy effervescence.
Very
great length on the palate.
Olivier
Bonville, oenologist and cellar master of the Champagne House Franck Bonville,
was able to select the quintessence of the locality Les Belles Voyes, original
plot of the wine estate on the hillsides of the Oger Grand Cru, to compose a
high level Champagne.
To
taste from aperitif to meal, with a cod fillet in bay steam, for example.
Fourth
generation of wine growers, settled in Avize, the Champagne House Franck
Bonville carefully cultivates the 77 plots of its 15 hectares Grand Cru
vineyard, exclusively planted with Chardonnay, in the greatest respect of soils
and environment. A gentle and accurate oenology allows to produce around
150,000 bottles of Champagne each year, variations inspired around the noble
chalky soils in the Côte des Blancs.
