Traditional, neat and luxurious presentation.
Aspect:
Golden
and brilliant.
Fine
and festive bubbles.
Bead
of bubbles in corolla, persistent on the periphery of the flute after service.
Nose:
Intense
and charming, the nose is immediately revealed.
Radiant
aromas of apple, pear, nice ripe citrus fruits, hazelnut and white flowers,
delicately mentholated, signatures of the majority of Chardonnay (60%).
The
Pinot Noir (40%) is then unveiled with its generous scents of red and black
fruits (blackberry, strawberry, raspberry, blueberry and blackcurrant), coupled
with subtle spices (liquorice and pepper).
Palate:
Balanced
opening, between intensity obtained by the selection of the first juices (cuvée) during the soft pressing of the
grapes and creamy roundness, result of the fulfillment of the malolactic
fermentation of the base wines and the generous dosage, with 9 g/L of sugar
added at disgorgement.
We
find again red fruits already perceived at the nose, coupled with touches of
exotic fruits, underlined by the lively effervescence.
Deliciously
acidulous finish, puntuated by spices.
Great
length on the palate.
With this cuvée Instant
Impérial, Florence Dauphin and her uncle Didier Goussard, oenologist, were able
to select their best grapes to compose the inspired blending of varietals and
vintages and to offer us a touching interpretation of the terroir of Avirey-Lingey, in the Côte des Bar.
To
taste from aperitif to meal, to accompany a marinated centre-cut salmon fillet,
for example.
Wine
grower in Avirey-Lingey, in the Côte des Bar, for four generations, the
Champagne House Florence Dauphin is now directed by Florence Dauphin and her
mother Francine. Certified Terra Vitis, the vineyard of 3 hectares, mainly
planted with Pinot Noir, is cultivated with a real desire to reduce the
environmental footprint. A controlled oenology give birth to around 6,000
bottles of Champagnes with personality per year, under the brand Florence
Dauphin created in 2008.
