Organic Champagne
Sober and original bottle.
Aspect:
Solar.
Very
fine bubbles.
Delicate
bead of foam.
Nose:
Sensual
and endless aromatic harmony.
Well
defined maturity, with its scents of honey and pastries supported by subtle
spices, evolving towards roasted coffee, light tobacco and cocoa, result of the
long ageing on laths of the bottles (10 years) with corks.
The
nose then maliciously oscillates between white fruits compote, signatures of
the Chardonnay (25%) and especially of the ancestral Pinot Blanc (28%), and the
candied red and black fruits, characteristic signs of the Pinot Noir (35%) and
the Meunier (12%).
Palate:
Deep
and dense at the opening, enhanced by the radiant minerality of the terroir.
The
delicate spices due to the vinification in 200 litres oak barrels mingles with
tasty hints of exotic fruits, obtained by a natural fermentation of the juices
made by the indigenous yeasts brought by the grapes selected in the oldest
plots of the wine estate (30 years old).
Deliciously
acidulous finish, reinforced by the adjusted dosage with less than 3 g/L of
sugar added while disgorging on the spot.
Great
length on the palate.
With
this Cuvée Robert Fleury 2005 Extra Brut, Jean-Sébastien Fleury pays a vibrant
homage to his visionary grandfather who was able to produce the first cuvées of the Champagne House Fleury in
1929.
To taste from aperitif to meal, with a roast veal fillet and his bean
mousseline, for example.
Located in Courteron in the Côte des Bar, the Champagne House Fleury is
now directed by the fourth generation: Jean-Sébastien, Morgane and Benoît
Fleury, brothers and sister. In a continuing effort to reduce the environmental
footprint, the wine estate of 15 hectares certified by Ecocert, Demeter and
Biodyvin is cultivated in biodynamy since 1989. The respect of the terroirs and a creative oenology give
birth to around 200,000 bottles of highly expressive Champagnes per year.
