Bright, original and elegant bottle.
Aspect:
Solar.
Very
fine bubbles.
Delicate
bead of bubbles.
Nose:
Radiant
and gourmet, thanks to the long period between disgorgement and marketing (3 to
6 months).
Heady
respiration, between aromas of white fruit and red and black fruits,
deliciously iodized, translations of the inspired blending, with tasting, of
the base wines from the three champenois
varietals (40% of Chardonnay from 2006, 35% of Pinot Noir from 2005 and 25% of
Meunier from 2006).
Well
defined maturity, result of 9 years of ageing on laths of the bottles before
disgorgement, with generous scents of gingerbread and pastries, evolving
towards touches of roasted coffee and cocoa.
Palate:
Supple,
deep and dense attack, underlined by the joyful minerality of the terroir of Damery, in the Marne Valley.
The
mouth becomes caressing, expression of the partial malolactic fermentation of
the base wines and of the considered dosage, with 7.5 g/L of sugar added at
disgorgement.
Tasty
finish, underlined by the creamy effervescence.
Remarkable
length on the palate.
With this Cuvée
Prestige Hermance, homage to Patricia’s grandmother, Jean-Louis Faniel, cellar
master of the Champagne House Faniel-Filaine, was able to implement and
inspired and natural oenology, without inoculation with yeasts nor with lactic
bacteria and with a very low dosage of sulphur, to offer us this rare cuvée, source of intense pleasure.
To
taste from aperitif to meal, with a hot foie
gras slice, for example.
From
the union of two families historically settled in the Marne Valley, the
Champagne House Faniel-Filaine perpetuates the champenois expertise since 1696. Jean-Louis vinifies with
gentleness and passion grapes from the three champenois varietals carefully selected within his vineyard well
exposed on the southern slopes of the Marne Valley, to produce quality Champagnes.
