The
meunier, exclusive varietal of the cuvée,
carefully selected in 2012 (50%) and in 2013 (50%), establishes its aromas of
candied red and black fruits, underlined by soft spice flavours.
Later,
the nose opens up with an iodized and mentholated breath supported by sensual
hints of honey, definitely the expression of the Champagne maturity obtained by
30 months of ageing on laths with corks held by a clip, before disgorgement on
the spot.
Palate:
Pure
opening, thanks to the selection of the best juices (coeur de cuvée) delicately extracted with the traditional Dollat
press of the House, to the timely stop of the malolactic fermentation of the
base wines and to the adjusted dosage, with only 2.4 g/L of sugar added at
disgorgement in the form of expedition liqueur made with wines from 2004.
The
mouth is revealed, deep and tasty, reinforced by the ageing of the base wines
on fine lees.
Balanced
finish.
Impressive
length on the palate.
With
this reserved cuvée Le Bois de Binson
– Extra Brut (2,000 bottles), available in limited quantities in October 2016,
Eric Taillet, wine grower, reveals us the touching soul of the eponymous plot
of 25.12 ares, planted en 1956 by his father Daniel, in the terroir of Montigny in the Marne Valley.
To taste during
meal, with a venison loin and candied quinces, for example.
Settled in Baslieux-sous-Châtillon, the

vineyard of 5.75 hectares planted in the terroir
of Baslieux-sous-Châtillon and the crus
around, cultivated in the respect of the environment, and an accurate and
creative oenology allow Eric Taillet, Meunier lover, to produce with passion
around 35 000 bottles of genuine Champagnes per year.
