Festive and harmonious presentation, for this cuvée specially created for Valentine’s
Day, only available in half bottle.
Aspect:
Coppery
colour, bright and sparkling, result of the traditional blending of around 10%
of red wine from Pinot Noir and 90% of white wine.
Fine
and dynamic bubbles, thanks to a well controlled prise de mousse, at 12°C, in half bottles (37.5 cL), in the several
hundred years old cellars of the House.
Elegant
bead of foam.
Nose:
Radiant,
thanks to the respect of a long period (6 months) between disgorgement and
marketing.
Joyful
farandole of flavours of candied red fruits, signatures of the Pinot Noir
(60%).
Later,
the Chardonnay (40%) is revealed with scents of apple and pear compote,
highlighted by a mentholated breath.
Palate:
Sensual
opening, supported by a gentle minerality.
Beautiful
balance, expression of the specific dosage with 15 g/L of sugar added at
disgorgement as a homemade expedition liqueur based on Chardonnay wine,
reinforced by an ageing on laths of 2 years with not much permeable caps to
take into account the maturation faster in half bottle.
Creamy
and warm finish.
Great
length on the palate.
With this Brun de Folie – Extra Dry, Philippe Delescot, cellar master
of the House Edouard Brun et Cie, was able to blend wines from 2012 (80%) and
reserve wines (20%) to revisit with talent the Grand Cru of Aÿ, and offer us
this gourmet bubble of creativity.
To
taste during romantic meals or among friends, around a gourmet green apple and blackberries
pie, for example.
Founded
in 1898, the Champagne House Edouard Brun et Cie cultivates with care its
vineyard of 8 hectares settled in the Mountain of Reims, in the Premiers Crus
of Chigny-les-Roses, Ludes and Rilly-la-Montagne, completed by Aÿ Grand Cru and
Mareuil-sur-Aÿ. The grapes selected, vinified in small volumes, give birth to
around 200,000 bottles of Champagnes with personality per year.
