Aspect:
Golden and bright.

Nose:
Initially shy, the nose is slowly unveiled and then takes us with its sensuality.
Radiant aromas of red and black fruits punctuated by subtle spices, obtained by the respect of a long period between disgorgement and shipment (3 months), touching signatures of the Pinot Noir, exclusive varietal of the Champagne.
The maturity is then unveiled with its generous scents of honey and caramel, barely roasted, result of 3 years of ageing on laths of the bottles with patient autolysis of the prise de mousse yeasts.
Palate:
Classy attack, thanks to the selection of the first juices (cuvée), purer, during the pressing of the grapes, and to the perfect control of the malolactic fermentation partly realized on the base wines.
The mouth is then sensual, almost structured, supported by the delicate minerality and by a touch of spices, perhaps thanks to the generous dosage with 9 g/L of sugar added at disgorgement, as an expedition liqueur produced with wines aged in casks.
Tasty finish.
Remarkable length on the palate.
With this Blanc de Noirs, Michel Parisot, cellar master of the Champagne House Devaux, was able to blend base wines from 2011 (80%) and reserve wines (20%, from the three previous years), to compose a Champagne with personality, beautiful interpretation of the Pinot Noir on the Côte des Bar terroir.
Ideal for meals, with a deer steak and its damson cake, for example.
With the quality of the grapes as a priority, the 800 associated wine growers, advised by four experienced technicians, entered with passion the approach “wine-making quality” implemented by the Champagne House Devaux. A rigorous selection of the best plots (100 hectares) of its vineyard of 1400 hectares and a creative and accurate oenology give birth to around 700,000 bottles of Champagnes per year, marketed under the brand created in 1846.
