Sober and harmonious bottle.
Aspect:
Pale gold, decorated with emerald glints.
Bubbles with a great finesse.
Refined bead of bubbles.
Nose:
Charming, it slowly unveils a joyful complexity.
Aromas of apple, pear, citrus fruits, apricot and raisin, white flowers, touching expressions of the majority of Chardonnay (two thirds), gently embrace the perfumes of cherry, raspberry, strawberry, blackberry and blueberry, barely spicy, characteristic signs of the Pinot Noir (one third).
The radiant maturity is then revealed, result of three years of ageing on laths of the bottles before disgorgement, with autolysis of the prise de mousse yeasts, bringing to light sensual scents of honey and gingerbread, highlighted by a iodized and mentholated breath.
Palate:
Lively and neat opening, obtained by the rigorous selection of the cuvée, first juices purer, during the soft pressing of the grapes.
Delicious harmony thanks to the judicious fulfillment of the malolactic fermentation of the base wines and to the generous dosage with 10 g/L of sugar added at disgorgement.
Sensual finish supported by the minerality.
Very great length on the palate.
For this cuvée Brut Tradition Premier Cru, Yannick Collet, cellar master of the Champagne House De Saint Gall, was able to blend with talent the best Premiers and Grands Crus of Champagne to compose a pleasure Champagne, touching sweet.
Champagne for all occasions, from aperitif to meal, with a warm goat cheese salad with honey and walnut, for example.
