Aspect:
Golden,
solar.
Fine
bubbles.

and persistent bead of bubbles.
Nose:
Radiant
thanks to the respect of a long period between disgorgement and shipment (more
than 6 months).
Delicious
scents of apple and pear compote, citrus fruits and almond, expressions of the
Chardonnay (50%), enhanced by a iodized and mentholated breath, a
characteristic sign of the noble terroirs
of chalk.
The
Pinot Noir (33%) and the Meunier (17%) are then unveiled with scents of red and
black fruits, barely spicy, supported by a joyful maturity, with its notes of
caramel, honey, evolving towards cocoa and roasted coffee, result of 10 years
of patient ageing on laths of the bottles before disgorgement.
Palate:
Lively and tasty attack, signature of the House, due to the
selection of the first juices (cuvée)
purer, during the pressing of the grapes.
The minerality leads us to a round, deep and warm mouth,
obtained by the judicious fulfillment of the malolactic fermentation of the
base wines, supported by a generous dosage, with 10 g/L of sugar added at
disgorgement.
Dense, never-ending finish, punctuated by delicate spices.
Great length on the palate.
With this Brut Millésime 2004, Elisabeth Sarcelet, cellar
master of the Champagne House De Castelnau was able to blend with talent the
varietals and the noble terroirs to
offer us a great Champagne.
To
taste during gastronomic meals, to accompany a marinated gilthead bream, for
example.
Established in the
heart of Reims, in a production site allowing to age 29 million bottles, the
Coopérative Régionale des Vins de Champagne (CRVC) tries hard to extract the
quintessence of its 900 hectares planted in 149 Crus of Champagne. A perfect
control of blendings, realised by tasting on separately vinified wines,
according to their origin, gives birth to around 500,000 bottles of high level
Champagnes per year, marketed under the brand De Castelnau acquired in 2003.
