Sober and bright presentation.
Aspect:
Golden
and glinting.
Fine
bubbles.
Bead
of scattered bubbles, persistent after service of the flute.
Nose:
Touching
and sensual, between elegance and generosity.
Endless
farandole of aromas of red and black fruits punctuated by soft spices, joyful
signatures of the Pinot Noir (30%) carefully selected in the terroir of Celles-Lès-Condé in the Marne
Valley.
The
Chardonnay (70%) from old vines of the Grands Crus of the Côte des Blancs
(Avize, Cramant and Chouilly) is then slowly revealed with scents of apple,
pear, citrus fruits, apricot and grape, underlined by an iodized and
mentholated breath.
Palate:
Dense
attack, led by a delicious tension thanks to the rigorous selection of the
first juices (cuvée) during the
pressing of the grapes.
The
mouth becomes a sensual caress, gentle and enveloping, underlined by the
delicate effervescence, definitely the expression of the great maturity of the cuvée obtained by 4 years of ageing on
laths of the bottles before disgorgement, with patient autolysis of the prise de mousse yeasts.
Tasty
and mineral finish.
Great
length on the palate.
With this cuvée Tradition
Extra Brut, Lionel Chardonnet, passionate wine grower, was able to compose an
original and inspired blending, with 50% of base wines from 2011 and 50% of
continuous blending (solera), to offer us a generous Champagne, with good value
for money, also available in brut and demi-sec.
To
taste from aperitif to meal, with tournedos of duck magrets, for example.
Wine grower in
Avize, the Champagne House Chardonnet et Fils has been perpetuating with
passion the champenois traditions for
three generations. A 6 hectares vineyard, of which 3 hectares of Chardonnay in
the Grands Crus of the Côte des Blancs and 3 hectares of Pinot Noir and Meunier
with a good southern exposure, in the Marne Valley, gives birth to a range of highly
expressive Champagnes each year.
