Sober presentation, modern and original.
Aspect:
Pale
gold.
Very
fine bubbles.
Delicate
bead of bubbles, persistent after service.
Nose:
Heady
and endless aromatic farandole, allowed by the absence of sulphitage at
disgorgement.
The
finesse and the elegance of the Chardonnay selected on old vines (more than 35
years old) of the Grand Cru terroir
of Avize, is harmoniously combined with the generosity of the Pinot Noir from
Passy-Grigny and the Meunier from Fleury-la-Rivière.
The
maturity is then revealed, with touches of subtly spicy (vanilla and cinnamon)
caramel and brioche, result of 3 years of ageing on laths of the bottles before
disgorgement.
Palate:
Dense
and tasty opening, supported by a life-giving freshness, barely mentholated,
thanks to the absence of dosage (no sugar added at disgorgement), reinforced by
the rigorous selection of best juices (coeur
de cuvée), during the soft pressing of the grapes.
The
mouth then unveils a smooth suppleness, thanks to the judicious fulfillment of
the malolactic fermentation of the base wines, enhanced by a creamy
effervescence.
Deliciously
acidulous finish, punctuated by citrus fruits (lemon and grapefruit) and red
fruits.
Great
length on the palate.
With
this Extra Brut, Pascal Maumy was able to pass his expertise of wine grower to
Xavier Petit, to blend in equal shares the three champenois varietals harvested by hand in 2011, and shake up the champenois traditions.
Champagne for all
occasions, from aperitif to meal, to taste with a striped mullet with star
anise, for example.
It was in 2013 that Xavier Petit
and Vanessa Maumy decided to devote themselves to the family wine estate. The
vineyard of 6.5 hectares cultivated in the respect of the environment and
spread over 10 terroirs, between the
Côte des Blancs and the Marne Valley, allow them to compose with talent a range
of festive and bright Champagnes, between modernism and tradition, under their
brand By Fernand created in 2013.
