Nose:
Intense
first nose, it takes us into a sensual and endless aromatic whirlwind.
Scents
of caramel and marzipan slowly evolving towards hints of pastries and
chocolate, expressions of the harmonious maturity of the cuvée obtained by a long ageing on laths of the base wines (6
years).
The
nose unveils a heady richness, with some scents of apple, pear and citrus
fruits, signatures of the majority of Chardonnay (75%), enhanced by touches of
red and black fruits, thanks to the Pinot Noir (20%) and the Meunier (5%).
Palate:
Pure
opening, obtained by the rigorous selection of the first juices during the soft
pressing of the grapes, and by the timely stop of the malolactic fermentation
of the Chardonnay base wines.
The
mouth becomes soft, deep and sensual, characteristic sign of the very old plots
of vine of the House planted between 1940 and 1950 by Abel Bouché, Nicolas’s
grandfather.
Tasty
finish, punctuated by spices, reinforced by the inspired dosage with 8 g/L of
sugar added at disgorgement in the form of expedition liqueur produced with
wine aged in casks.
Great
length on the palate.
With this touching Cuvée Saphir, Nicolas Bouché, engineer and
oenologist, was able to blend with talent wines from three great vintages:
1999, 2000 and 2002.
Ideal
to accompany your meals, with a pigeon roasted on chest, for example.
Wine
growers in Pierry since 1920, the Champagne House Bouché Père et Fils has been
perpetuating with passion the family traditions for four generations. A
vineyard of 30 hectares, composed of the three champenois varietals in old plots of vine (over 30 years old on
average) and cultivated with care in the best Crus of Champagne, and a soft and
accurate oenology give birth to around 250,000 bottles of Champagnes with
personality per year, under the brand created in 1945.
