Aspect:
Golden
and brilliant.

Nose:
Pleasant
from the first nose, thanks to the low dosage of SO2.
Farandole
of red and white fruits punctuated by delicious spices, particular signatures
of the Pinot Noir harvested at perfect ripeness in 2013, in the plots
well-exposed at mid-slope in the locality “Les Fiolles” in Celles-sur-Ource and
“Les Cogneaux” in Essoyes, in the eastern part of the Val Marin.
The
nose is revealed with a life-giving breath, iodized and mentholated, inimitable
characteristic sign of the hard chalk of the terroir, coupled with improbable scents of exotic fruits definitely
obtained by low temperature (14°C) at the beginning of the alcoholic
fermentation of the base wines.
Palate:
Dense
and lively opening, due to the rigorous selection of the first juices (cuvée) during the pressing of the
grapes.
The
mouth becomes caressing, deep and warm, result of the natural fulfillment of
the malolactic fermentation of the base wines.
Tasty
finish enhanced by an accurate dosage, with 8 g/L of sugar added (in the form
of “homemade liqueur“ made of cane sugar) at disgorgement (on the spot), after
manual riddling on wood panels.
Great
length on the palate.
Benoit Tassin has put his talent of passionate wine grower in the
service of this Cuvée Blanc de Noirs, source of rare feelings.
To taste during festive meals, with a squab breast and meat flambée, for example.
Settled in
Celles-sur-ource, in the heart of the Côte des Bar, the Champagne House Benoit
Tassin offers a friendly reception in the wine estate with its old bottles
museum. A traditional and accurate vinification of its best grapes from its
vineyard of 4.75 hectares, composed of 14 plots spread over Essoyes and
Celles-sur-Ource, and cultivated with a real desire to reduce the environmental
footprint, allows to produce around 16,000 bottles of highly expressive
Champagnes per year.
