Aspect:
Golden and brilliant.

Nose:
Captivating aromatic
breath.
Radiant aromas of citrus
fruits, apple, pear and hazelnut, enhanced by a life-giving breath, iodized and
mentholated, touching signatures of the Chardonnay.
Later, the fullness of
the cuvée is revealed with warm
fragrances of honey and roasted coffee, expressions of the 3 years of ageing on
laths of the bottles before disgorgement, but especially of the continuous
blending of the base wines (solera), since 1982, at a rate of 40% each year.
Palate:
Opening highlighted by
the touching vibration of the chalk with belemnites of the underground of
Chouilly.
The tension takes us,
true vital force, reinforced by the rigorous selection of the first juices (cuvée) during the pressing of the grapes
and by the very low dosage, with only 1.5 g/L of sugar added at disgorgement.
Dense finish, punctuated
by subtle spices.

82/12 - Grand Cru - Blanc de Blancs - Extra Brut, Jean-Pierre Vazart convokes
with talent 30 years of harvest and production, to offer us an unique encounter
with the terroir of Chouilly, rare
Grand Cru of the Côte des Blancs.
To taste from aperitif
to meal, with pan-fried prawns and its vegetables tartar, for example.
Driven since 1995 by the
real desire to reduce the environmental footprint (certified Haute Valeur
Environnementale in 2012 and sustainable viticulture of Champagne in 2015),
Jean-Pierre Vazart, third generation of wine growers, cultivates with care its
11 hectares vineyard composed of a mosaic of plots in Chouilly, mainly planted
with Chardonnay (96%). An inspired œnology, with vinifications in small
volumes, gives birth to around 70,000 bottles per year of a range of champagnes
with a strong character.
