Refined presentation.
Aspect:
Gold, with reserved ruby
red glints.
Refined and dynamic
bubbles.
Fine bead of foam.
Nose:
Sensual and generous
aromatic harmony.
Delicate fragrances of
citrus fruits, apple, almond, hazelnut and mint, signatures of the Chardonnay,
mingle with the aromas of red and black fruits from the black varietals (Pinot
Noir and Meunier).
Later, the nose reveals
a gourmet caress, with notes of brioche and caramel, expressions of the
maturity of the Champagne obtained by the long ageing on laths of the bottles
before disgorgement, underlined by subtle woody notes thanks to the
vinification and to the ageing of the base wines in oak barrels.
Palate:
Pure and delicious
tension, true vital force, at the opening, result of the meticulous selection
of the best juices (cœur de cuvée) during
the soft pressing of the whole grapes.
The mouth becomes supple
and creamy, highlighted by flavours of exotic fruits, definitely the expression
of the alcoholic fermentation realised at 16°C, in oak barrels, reinforced by
the fulfilment of the malolactic fermentation of the base wines.
Tasty finish.
Remarkable length on the
palate.
For this Cuvée
Sous-Bois, Benjamin Rogge, its producer, composed with tasting, the delicate
blending of varietals, terroirs and
years, to offer us a radiant Champagne.
To taste as an aperitif,
but especially during festive meals, with a sturgeon fillet, lime and ginger,
for example.
Founded in 1982 in
Passy-Grigny, in the Marne Valley, the Champagne House Rogge Cereser continues
its quest for quality. Benjamin Rogge presides over the destiny of the House
since 2000 and slowly establishes his style, between reasoned culture of its 10
hectares vineyard to reduce the environmental footprint and accurate oenology
with ageing of a part of the wines in oak barrels, to produce around 75,000
bottles per year of a range inspired by 9 Champagnes with personality.
