Guide VERON des Champagnes 2018
(around 18 euros per bottle)
Luxurious presentation.
Aspect:
Amber colour, bright.
Fine and festive
bubbles.
Elegant bead of bubbles.
Nose:
Harmonious and endless
farandole of joyful scents.
Scents of nice ripe red
and black fruits (strawberry, raspberry, blackcurrant, blueberry and
blackberry), peppered with delicious spices (liquorice, pepper and cinnamon),
generous characteristic sign of the Pinot Noir.
The mouth becomes soft,
with delicate touches of cacao and roasted coffee, expressions of the maturity
of the Champagne obtained by 3 years of ageing on laths of the bottles before
riddling and disgorgement.
Palate:
Neat and accurate
attack, thanks to the rigorous selection of the first juices (cuvée) during the pressing of the
grapes, highlighted by the radiant minerality.
The mouth is then
unveiled, supple and deep, supported by a tasty and enveloping warmth,
definitely thanks to the fulfilment of the malolactic fermentation of the base
wines and to the accurate dosage with 8 g/L of grape sugar added at
disgorgement.
Balanced and lively
finish.
Very great length on the
palate.
For this Brut Rosé,
Vincent Leboeuf, its producer, was able to select with care the Pinots Noirs
from his best Crus (majority of Grands Crus), in 2012, to blend with talent his
white wine (90%) and his red wine (10%, only free run wine) obtained by a 6
days maceration of small grapes and loose bunch from old vines, to extract
fruit but not tannins.
To taste from aperitif
to meal, with a duo of duck breast fillet and foie gras with morels, for
example.
Settled in Aÿ, historic
capital of the Champagne area, the Champagne House Pierre Leboeuf in a
continuing effort to reduce the environmental footprint, cultivates with care
its vineyard of 4,70 hectares established in the terroirs of Aÿ, Mutigny and Avenay-Val-d’Or. Now joined by his
daughter Hélène, fifth generation, Vincent Leboeuf perpetuates the champenois traditions producing with accuracy
around 25 000 bottles per year of authentic Champagnes.
