brilliant.

Nose:
Sensual breath,
reinforced by the vinification of a part of the base wines in oak barrels.
The majority of Pinot
Noir (90%) immediately establishes itself with its aromas of candied red and
black fruits, driven by delicate spices.
Later, the Champagne
reveals its captivating fullness with fragrances of gingerbread and then of
roasted coffee, characteristic sign of the long ageing in bottles (4 years)
before riddling and disgorgement.
Palate:
Tonic and dense attack,
supported by the delicious tension and minerality, highlighted by touches of
white fruits and citrus fruits, delicate elegance of the Chardonnay (10%).
The mouth is revealed
voluptuous, supported by the judicious fulfilment of the malolactic
fermentation of the base wines and by the accurate dosage with 8 g/L of sugar
added at disgorgement.
Life-giving finish.

For this Cuvée Suprême
Vintage Grand Cru Millésime 2012, first opus of their new collection Vintage,
Germain Delabaye and his son Victor, wine growers, were able to revisit the
Grand Cru terroir of Aÿ to establish
with talent the confident style of the House.
Essential from aperitif
to meal, with a duck fillet, soft spices and dried fruits, for example.
Wine growers in Damery,
in the Marne Valley, for five generations, the Champagne House Maurice Delabaye
et Fils continues with passion its endless quest for excellence. Concerned
about reducing the environmental footprint, it cultivates its 10 hectares
vineyard planted with the three champenois
varietals, of which nearly half is classified as Premier Cru (Cumières,
Hautvillers and Dizy) and Grand Cru (Aÿ). A gentle and patient œnology in the
service of great quality grapes gives birth each year to around 100,000 bottles
of highly expressive Champagnes.
