Nose:
Radiant and captivating.
Initially marked by the
majority of Pinot Noir (75%) with its candied fragrances of strawberry, cherry,
raspberry, blackcurrant and blackberry, highlighted by delicious touches of
spices, the nose takes us into delicate notes of white fruits, signatures of
the Chardonnay (25%).
Later, the maturity of
the Champagne is revealed, heady, with scents warms of brioche and roasted
coffee, result of 9 long years of ageing on laths of the bottles, in the deep
chalk cellars of the House.
Palate:
Vertiginous purity,
definitely the reflection of the rigorous selection of the juices from the
first pressing (cuvée), reinforced by
the adjusted dosage with only 6 g/L of sugar added at disgorgement.
The mouth becomes a
sensual caress, enhanced by the fabulous mineral tension of the chalk of the
Grand Cru terroir of
Mailly-Champagne.
Lively finish, coupled
with a touch of exotic fruits thanks to the fulfilment of the alcoholic
fermentation of the base wines at 16°C.
Endless length on the
palate.
With this cuvée Les Echansons Millésime 2007,
Sébastien Moncuit, cellar master of the Champagne House Mailly Grand Cru,
offers us a new unmissable opus of this champagne now emblematic.
To taste from aperitif
to meal, with a fried sweetbread, prawns with girolle mushrooms and morels, for
example.
Created in 1929 by a
handful of audacious wine growers to tackle the economic crisis together in a
France still marked by the first world war, the Champagne House Mailly Grand
Cru has been resolutely perpetuating the founders’ values. The 480 plots of the
75 hectares vineyard, planted with 75% of Pinot Noir and 25% of Chardonnay,
exclusively located in the Grand Cru of Mailly-Champagne, give birth each year
to around 500,000 bottles of a range inspired by exceptional Champagnes.
