Guide VERON des Champagnes 2018
(around 21
euros per bottle)
Original and luxurious
bottle.
Aspect:
Gold, bright.
Fine and dynamic
bubbles.
Refined bead of foam,
persistent.
Nose:
Captivating and endless
aromatic harmony.
The radiant fragrances
of candied red and black fruits, signatures of the minority of black varietals
(15% Pinot Noir and 15% Meunier) gently interlace the scents of apple, pear and
citrus fruits highlighted by an iodized and mentholated breath, delicate
characteristic signs of the Chardonnay (70%).
Later, the cuvée reveals its fullness with notes of
honey and caramel barely spicy, result of 7 years of patient ageing on laths of
the bottles before riddling and disgorgement, in the cellars of the House.
Palate:
Seductive tension at the
opening, reinforced by the timely stop of the malolactic fermentation of the
base wines.
Later, the mouth is
unveiled, sensual and deep, supported by the generous dosage with 9 g/L of
sugar added at disgorgement, underlined by the vibrant minerality.
Delicious finish, driven
by the adjusted effervescence.
Remarkable length on the
palate.
For this Cuvée Eugène,
Johan Casters and his father Jean-Louis were able to orchestrate with
sensitivity the meeting of vintages (2006, 2007 and 2008) and terroirs (Marne Valley, Côte des Blancs
and Mountain of Reims) to offer us a heady champagne, touching homage to the
founder of the House.
To taste as an aperitif
or during a meal, with a sweetbread with hazelnut Crust and its spinach pasta,
for example.
Founded in Damery in
1899 by Eugène Cadel, who comes from a long line of wine growers, the Champagne
House Louis Casters has been perpetuating with passion the champenois traditions. A 13 hectares vineyard cultivated with care
in the best Crus of Champagne, between Côte des Blancs, Mountain of Reims,
Marne valley and Côte des Bar, completed by a supply selected with partner wine
growers, gives birth to around 250,000 bottles per year of high level
Champagnes, delivered in many countries.
