Original and sober

Aspect:
White gold, brilliant.
Fine bubbles.
Fine bead of foam, persistent.
Nose:
Charming, source of
intense pleasure.
Endless farandole of
aromas of red and black fruits, punctuated by delicate spices (liquorice and
cinnamon), signatures of the majority of black varietals (72% of Meunier and 9%
of Pinot Noir), highlighted by notes of white fruits and exotic fruits, subtle
touches of the Chardonnay (19%).
Patience is rewarded by
the appearance of generous fragrances of honey and caramel, expressions of the
radiant maturity, obtained by 4 years of patient ageing on laths of the bottles
before riddling and manual disgorgement.
Palate:
Dynamic opening,
supported by the vibrant minerality, due to the chalk rich in marine fossils.
The mouth becomes gentle
and creamy, sensual caress, thanks to the judicious fulfilment of the
malolactic fermentation of the base wines and to the accurate dosage, with 8
g/L of sugar added at disgorgement.
Dense finish, coupled
with a delicious bitterness.
Great length on the
palate.
For this Brut Tradition,
Elise Payer and her father Ghislain, were able to blend with talent, with
tasting, the base wines from 2012, from their best plots, to offer us a radiant
interpretation of the beautiful terroir
of Fleury-la-Rivière.
To taste from aperitif
to meal, with a cod-fish loin, coconut milk and pink grapefruit, for example.
Created in 1954, the
Champagne House Ghislain Payer et Fille has been perpetuating with passion the champenois traditions, over generations.
Driven by the desire to reduce the environmental footprint, Ghislain Payer, his
wife Murielle and their daughter Elise, cultivate with care their vineyard of 4
hectares, established in Fleury-la-Rivière, in the Marne Valley. Voluntarily
limited grape yields and long ageing of the wines on laths give birth to around
15,000 bottles per year of authentic Champagnes.
