Mythical Champagne
Inimitable design. Ancestral wire in hemp string and wax
seal.
Aspect:
White gold, crystal-clear.
Extremely fine bubbles.
Eminent bead of foam.
Nose:
Dense and radiant, it takes us into its overwhelming aromatic
universe.
Sensual scents of hazelnut and caramel, initially reserved
and then more confident, evolving towards touches of pastries, barely toasted,
expression of the fullness of the cuvée
obtained by 7 years of ageing on laths of the bottles, with autolysis of the prise de mousse yeasts.
Later, the Meunier, exclusive varietal of the cuvée, harvested by hand in 2008 in
ancient plots of vine (over 65 years old), is unveiled with touching fragrances
of candied red and black fruits.
Palate:
Pure at the opening, thanks to the rigorous selection of the
best juices during the pressing of the grapes, but also to the timely stop of
the malolactic fermentation of the base wines.
The mouth then reveals all its vital force, enhanced by the
vibrant minerality and driven by the subtle effervescence.
Gentle and silky finish, punctuated by improbable spices.
Endless length on the palate.
With this Clos des Bergeronneau 2008, Florent Bergeronneau
revisits the Meunier glorified by the terroir
of the fabulous Clos des Bergeronneau born in 2007, to offer us an unique and
unavoidable Champagne.
To taste as an aperitif or during a gastronomic meal, with
slices of pan-fried duck foie gras
and cranberries, for example.
Established in Ville-Dommange, premier Cru of the Mountain of
Reims, the Champagne House Florent Bergeonneau has been perpetuating the champenois family traditions since 1590.
Now directed by Florent Bergeronneau, creator of the brand and of the Clos des
Bergeronneau (2.10 hectares in the heart of Ville-Dommange), assisted by his
wife Véronique and by his children Virginie and Fabien, concerned about
reducing his environmental footprint, he produces with passion high level
Champagnes.
