Original, festive and
harmonious bottle.
Aspect:
Pale gold, with reserved
ruby red glints.
Refined bubbles.
Fine bead of foam, in
corolla.
Nose:
Sensual and endless
aromatic breath, reinforced by the passage of a small part of the base wines in
barrels.
The majority of
Chardonnay (80%), takes us into a perfumed round dance where flit with elegance
notes of white and exotic fruits.
Later, touches of
candied red fruits betray the Pinot Noir (20%) before giving way to the gentle
fragrances of cocoa and roasted coffee, expressions of the beautiful maturity
of the cuvée obtained by 4 long years
of ageing on laths of the bottles, before riddling and disgorgement.
Palate:
Tasty and lively opening
thanks to the perfect control of the soft pressing of the whole grapes, with
rigorous selection of the first juices (cuvée).
The tension, highlighted
by the mineral force of the soils of Barbonne-Fayel and La
Celle-sous-Chantemerle, gives way to a dense and enveloping warmth.
Deep and balanced
finish.
Interminable length on
the palate.
For this cuvée Extra Brut, Vincent Huber, its
producer, was able to find the ideal dosage with only 4 g/L of sugar added at
disgorgement, to offer us an inspired interpretation of the purity of the terroirs of the Sézannais.
Ideal as an aperitif, it
will perfectly accompany a citrus fruits and smoked duck breast fillet salad,
for example.
Under the leadership of
Vincent Huber and his wife Nathalie, third generation of wine growers, the
Champagne House Diogène Tissier continues with passion the endless quest for
the quality started by its founder in 1931. A particular attention given to the
cultivation of the 9 hectares vineyard mainly established in the slopes of
Chavot-Courcourt, to harvest by hand the best grapes, and an accurate
production with vinification in vats and barrels, give birth to around 100,000
bottles per year of highly expressive Champagnes.
