Aspect:
Gold, bright.
Eminent bubbles.
Fine bead of foam.
Nose:
Radiant and generous, it
immediately takes us into an endless aromatic breath, obtained by the long
period between disgorgement and marketing.
The Meunier, exclusive
varietal of the cuvée, establishes
itself with thanks in a joyful farandole of red and black fruits, coupled with
improbable touchs of citrus fruits, apricot and grape.
Patience is rewarded by
gentle notes of chocolate and roasted coffee, characteristic sign of the
well-defined maturity of the Champagne, result of 5 years of ageing on laths of
the bottles before disgorgement.
Palate:
Dense and balanced
attack, highlighted by the touching minerality of the terroir of Boursault, in the Marne Valley.
The mouth then becomes
caressing, ample and gourmet, thanks to the ageing of the base wines on fine
lees before bottling.
Silky finish, punctuated
by delicate spices, supported by a breath of freshness underlined by the
accurate dosage with 7 g/L of sugar added at disgorgement.
Remarkable length on the
palate.
For this Blanc de Noirs,
Bruno de Villepin was able to accompany with gentleness the Meunier harvested
by hand in 2009 (50%) and in 2010 (50%), carefully avoiding the filtration of
the base wines to reveal the heady personality of the terroir of Boursault, between elegance and greed.

in 1999, Bruno De
Villepin, 10th generation of a long line of wine growers from Burgundy, took
control of the wine estate of Boursault, bought by his grandfather from the
Duchess of Uzès, grand-daughter of the Veuve Clicquot. Driven by the real
desire to reduce the environmental footprint of its vineyard of 2.12 hectares,
he vinify each plot separately in his new fermenting room settled in 2008, to
compose his inspired collection of champagnes marketed since 2013.
