Sober and bright bottle.
Aspect:
Golden, solar and
crystal-clear.
Bubbles of a rare
finesse.
Fine bead of bubbles,

Nose:
Generous and endless.
The Chardonnay, exclusive
varietal of the cuvée, gently
establishes itself, graceful and heady, with its scents of peach, candied
citrus fruits, apricot and grape, highlighted by a mentholated breath.
Later, the radiant
fullness of the Champagne is revealed, sumptuous, with its fragrances of honey
and caramel, and then of roasted coffee, characteristic sign of the patient
autolysis of the prise de mousse
yeasts during the 10 years of ageing on laths of the bottles before riddling
and disgorgement.
Palate:
Dense and lively opening,
driven by the chalky minerality.
The mouth becomes
caressing, gentle and warm, highlighted by the lively effervescence.
Interminable finish
punctuated by delicate spices (pepper and cinnamon).
Remarkable length on the
palate.
With this cuvée Blanc de Blancs Millésime 2005,
Elisabeth Sarcelet, cellar master of the Champagne House De Castelnau, was able
to orchestrate the delicate osmosis between the best Crus of the Mountain of
Reims (Trépail, Ludes, Villers-Marmery, Verzy, Tauxières-Mutry and
Rilly-la-Montagne) and of the Côte des Blancs (Chouilly and Le
Mesnil-sur-Oger), completed by Nogent-l’Abbesse and Bassuet, to offer us this
unmissable Champagne.
To taste from aperitif
to meal, to accompany a duckling stew farcie with citrus fruits, blueberry
sauce and raspberry vinegar, for example.
While the Champagne
House De Castelnau has just celebrated its centenary, it goes straight to the
heart of the 21st century, driven by its visionary director Pascal Prudhomme
and by its new CEO Fabrice Collin. 762 wine growers cultivate with care the 900
hectares of vines established in 149 of the best Crus of Champagne. An accurate
vinification in the 5 hectares production site, in Reims, enables to produce
around 500,000 bottles per year of a range inspired by Champagnes, renewal of
the brand illustrated by the Hors Catégorie cuvée.
